Squash Soup

I’m not much for soups during the warm season, but when the temps start to drop give me all the soups, stews, and soup-ish braises that you’ve got.

I picked up a butternut squash from a trust box on a recent ride and turned it into squash-apple soup today using a recipe from Martha Stewart , except where Stewart used chicken broth I used a can of hard cider.

This version is seasoned with cumin, coriander, and ginger, and while it is quite good, I usually make it with sage and I think I prefer the sage version.
